    2.1. The basic norms, in accordance with which payments for harvested mustard seeds are made, are indicated in Table 2.

    2.2. Restrictive norms

    2.2.1. Restrictive norms for harvested and supplied mustard seeds are indicated in Table 3.

    * By agreement of the procurement organization and the supplier, seed moisture content and weed content in mustard seeds are allowed at more restrictive standards, provided it is possible to bring such seeds to conditions that ensure their safety.

    2.4. Procured and supplied mustard seeds must be heat-resistant, in a healthy condition, and have the smell characteristic of normal mustard seeds (without musty, moldy or foreign odors).
    The content of toxic elements, mycotoxins and pesticides in mustard seeds should not exceed the permissible levels established by medical and biological requirements, sanitary standards for the quality of food raw materials and food products of the USSR Ministry of Health.

    2.4a. Requirements for the quality of exported mustard seeds are established in an agreement (contract) between the supplier and a foreign economic organization or foreign buyer.
    At the request of the State Commission of the Council of Ministers of the USSR for Food and Procurement, the standards and quality indicators of imported mustard seeds may be changed in an agreement (contract) of a foreign economic organization.

    2.5. Composition of weed and oilseed impurities

    2.5.2. Weed impurities include:
    the entire passage through a sieve with holes with a diameter of 1 mm;
    in the remainder on a sieve with holes with a diameter of 1 mm:
    mineral impurity (earth, sand, pebbles, etc.);
    organic impurity (chaff, parts of stems and pods, seed films, etc.);
    seeds of all wild plants;
    seeds of cultivated plants not classified as oilseeds:
    mustard seeds, as well as rapeseed, rapeseed, indau, field mustard and camelina, spoiled by self-heating or drying, charred, moldy, rotten - all with clearly spoiled endosperm.

    2.5.3. Oily impurities include mustard seeds:

    broken, crushed and corroded;
    sprouted;
    severely underdeveloped - puny;
    unripe - green;
    damaged by self-heating or drying, moldy, fried, with a clearly changed color of the shell and endosperm.
    Oily impurities also include seeds of rapeseed, rapeseed, indau, field mustard and camelina, whole and damaged, not related to the nature of the damage as a weed impurity.

    3. ACCEPTANCE

    3.1. Acceptance rules - according to GOST 10852.

    3.2. Mustard seeds containing impurities of rapeseed, rapeseed, indau, field mustard, camelina or other oilseeds exceeding 15% of the mass of all seeds together with impurities are accepted as a mixture of mustard seeds with other crops, indicating its composition as a percentage.

    3.3. Each batch must be accompanied by a certificate confirming the content of toxic elements, mycotoxins and pesticides.

    3.4. The content of toxic elements, mycotoxins and pesticides is monitored in accordance with the established procedure.

    4. METHODS FOR DETERMINING QUALITY

    4.1. Sampling - according to GOST 10852.

    4.2. Determination of color and smell - according to GOST 27988.

    4.3. Determination of humidity - according to GOST 10856.

    4.4. Determination of weed and oilseed impurities - according to GOST 10854.

    4.5. Determination of pest infestation - according to GOST 10853.

    4.6. Determination of the content of toxic elements - according to GOST 26927, GOST 26928, GOST 26930 - GOST 26934, mycotoxins and pesticides - according to methods approved by the USSR Ministry of Health.

    This standard applies to ready-made mustard produced from mustard powder with the addition of flavoring additives. Mustard is intended for direct consumption as a seasoning -

    1. TECHNICAL REQUIREMENTS

    1.1. Mustard must be produced in accordance with the requirements of this standard according to technological instructions and recipes approved in the prescribed manner, in compliance with the rules approved by the sanitary inspection authorities, and the instructions “On the procedure for sanitary control of canned food at production enterprises, wholesale depots, retail trade and at public catering establishments”, approved by the USSR Ministry of Health.

    1.2. Range

    1.2.1. Depending on the flavoring additives used, mustard is produced in the following names: “Aromatic”, “Akhtu-binskaya”, “Volgogradskaya”, “Donskaya”, “Domashnaya”, “Lyubitelskaya”, “Rostovskaya”, “Russkaya”, “Stolovaya”, “ Mustard with horseradish”, “Mustard with garlic”.

    1.4 Packaging

    1.4L. For sale in retail chains, mustard is packaged in glass jars with a capacity of up to 0.25 dm 3 in accordance with GOST 5717-81, TU 21 RSFSR 620-73, aluminum tubes in accordance with OST 18-306-77 with a net weight of up to 0.25 kg or bags of a combination material according to TU 18 RSFSR 51 -80 with a net weight of up to 0.006 kg.

    For public catering establishments, upon agreement with the consumer, it is allowed to pack mustard in glass jars with a capacity of up to 3 dm 3 in accordance with GOST 5717-81.

    1.4.2. Jars of mustard are sealed with lids in accordance with OST 6-05-48-83‘or metal lids in accordance with OST 18-178-77.

    1.4.3. Filling, packaging according to GOST 13799-81.

    It is allowed to pack mustard in boxes in accordance with GOST 13360-84,

    Mustard bags are packed in boxes in accordance with GOST 10131 - 78, lined with paper in accordance with GOST 8273-75 or corrugated cardboard boxes in accordance with GOST 13516-86 or GOST 13512-81 in an amount of no more than 2000 pieces.

    Mustard seeds

    WHITE MUSTARD(Sinapis alba L.) is a plant whose homeland is considered to be in the Mediterranean countries, most likely North Africa. Since ancient times, the Greeks, Romans, and Egyptians began to grow it specifically to prepare seasoning from the seeds. Like many other spices, mustard came first to Western and then to Central Europe. In Russia it is cultivated in the Central Chernozem region.

    BLACK MUSTARD(Brassica nigra L.) or real mustard - the Mediterranean is rightfully considered its homeland. It grows wild throughout Europe, Asia, and northern Africa. Like many other spices, mustard came first to Western and then to Central Europe. In Russia it is cultivated in the Central Chernozem region.

    MUSTARD OF SAREPTIA- a plant grown as an aromatic crop in Russia in the Volga region. It received its name “Sareptskaya” from the German settlement of Sarepta (today Krasnoarmeysky district of Volgograd).


    White mustard

    An annual plant reaching a height of 50-80 cm. It has lyre-shaped leaves. During flowering it forms yellow inflorescences. The seeds ripen in pods that resemble curved hooks. Of all types of mustard, white mustard seeds are the largest. Light yellow or straw-yellow in color, their smell is not expressed in any way, the taste is rough and pungent.

    White mustard seeds contain up to 35% fatty oil and about 1% essential oil, sinalbin and potassium salt. Its beneficial properties have long been used in medicine for vascular sclerosis, hypertension, liver and gall bladder diseases, digestive disorders, flatulence, and rheumatism.

    White mustard seeds are used in vegetable and mushroom dishes, mushroom marinades, in the preparation of pork and beef meat, and game dishes. In the old days, white mustard seeds were placed in pickles made from cucumbers and vegetables, and flavored with smoked meats.


    Black mustard

    An annual plant with a height of 60 to 240 cm, leaves petiolate, green, flowers small, collected in sparse racemes. The fruits are tetrahedral, erect, pressed to the stem, 1-2.5 cm long. Black mustard differs from the closely related Sarepta mustard by its pressed pods and dark red-brown color of the seeds.

    The seeds are spherical, reddish-brown or dark brown, finely cellular, 1.0-1.6 mm in diameter. The fruits ripen in August - September.

    Oil from black mustard seeds is used for food and technical purposes, and the fat-free seeds are used to make the best varieties of table mustard. In France, the world famous Dijon mustard is made from black mustard.

    Black mustard has good honey-bearing properties, honey productivity is 260 kg/ha.

    This plant is also used in soap making.

    Black mustard seed powder is used in the Caucasus as a spice for making cheese.


    Sarepta mustard

    Quite a tall plant, with branched shoots. The leaves are spherical at the bottom and sessile, short-petiolate, oblong at the top. It blooms in May-July with bright yellow flowers, throwing out the inflorescence in the form of a brush. After flowering, tuberculate pods up to 3-5 cm long with an awl-shaped nose are formed, filled with spherical seeds of a reddish-brown, dark brown color. In terms of taste, Sarepta mustard is close to black mustard.

    The seeds are small, dark brown. Harvest August-September. Mustard seeds contain essential and fatty oils. The main active ingredients of the seeds are the glycoside sinigrin and the enzyme myrosin that destroys it. In addition, proteins, mucus, and minerals were found in them.

    Sarepta mustard seeds are both food and medicine. They are the raw material for the production of mustard oil. Due to the presence of essential oil, mustard stimulates the appetite, improves digestion, especially with intestinal sluggishness and a tendency to constipation, and has an anti-inflammatory and antiseptic effect. In the food industry, mustard seeds are widely used for canning meat and fish products, and for pickling vegetables, as they inhibit the processes of fermentation and rotting.

    1. TECHNICAL REQUIREMENTS

    1.1. Characteristics

    1.1.1. For sowing, mustard seeds of zoned and promising varieties approved in the prescribed manner should be used.

    1.1*2. In terms of varietal purity, mustard seeds must meet the requirements specified in table. 1.

    Each bag of seeds must be marked with the following information: crop; varieties;

    reproductions; harvest year; batch numbers; net weight of seeds;

    names and numbers of the grade document; names and addresses of the farm that grew the seeds; symbols of this standard.

    A label with the same data is placed in each bag, on which it is possible not to indicate the document number on varietal and sowing qualities.

    1.3. Package

    Mustard seeds are packed in bags in accordance with GOST 18225 weighing no more than 50 kg. Permissible deviation in the weight of filled bags is ±1%. Each bag must be sewn.

    2. ACCEPTANCE

    Acceptance rules - according to GOST 12036.

    3. TEST METHODS

    3.1. The varietal purity of mustard seeds is determined by approbation of crops according to the documentation specified in the application.

    3.2. The sowing qualities of seeds are determined according to GOST 12037, GOST 12038, GOST 12041-GOST 12047.

    4. TRANSPORTATION AND STORAGE

    4.1. Transportation

    Mustard seeds are transported by all types of transport in covered vehicles in accordance with the rules for the transportation of goods in force for this type of transport. Transportation of mustard in packages is in accordance with GOST 21929. The height of the package should not exceed 1.35 m, weight -1.2 tons.

    4.2. Storage

    4.2.1. Seeds are stored in closed, disinfected rooms.

    4.2.2. Each batch of packaged seeds is placed in separate stacks. In warehouses with asphalt, concrete sludge"

    With a stone floor, the bags are placed on pallets or wooden floorings, spaced at least 15 cm from the floor. The bags are placed in separate stacks. The stack height should be no more than six bags stacked on top of each other. The width of passages between stacks, as well as between stacks and the walls of the warehouse, must be at least 0.7 m, and passages between stacks for seed receiving and release operations must be at least 1.5 m.

    4.2.3. Stacked bags of seeds are transferred at least once every 4 months, with the top rows of bags placed in the bottom row, and the bottom rows on top.

    4.2.4. It is allowed to store seeds of reproduction II, intended for sowing for green mass, in an embankment no more than 1.5 m high.
