Preparation

Now we’ll tell you how to make the “Rotten Stump” salad. Mix the liquid pancake dough from milk, eggs and flour. Add ground paprika, finely chopped herbs and chopped onion to it. Pour a little oil into the frying pan, heat it up and bake 6 pancakes. Place them in a pile on the table and leave to cool.

Meanwhile, we are preparing the filling. We wash the vegetables and eggs, add water and boil until tender. Then we clean everything from peels, shells and cool. Grate the boiled potatoes on a coarse grater, add chopped dill and mayonnaise. Three carrots and also mixed with mayonnaise. Finely chop the eggs and combine separately with mayonnaise. Chop the mushrooms into strips and combine with herbs. Cut the ham into cubes and add mayonnaise.

Next we begin to form and fill our “stump”. We spread cling film or foil along the table. Cut the pancakes in half and overlap each other. We coat each pancake with soft cheese and lay out the filling in rows along the “pancake path” in any order.

After all the filling has been distributed, roll the pancakes into a roll, carefully pulling and bending the film or foil. We place the resulting “stump” on a plate, cut off the protruding ends of the pancakes, but do not throw them away, they will be useful to us for decoration. We form “roots” from the leftover filling and decorate them with the leftover pancakes. To prevent the seams from being visible, coat the entire surface of the “hemp” with soft cheese. We decorate the “stump” with herbs and mushrooms. If you wish, you can also decorate the dish with a “fly agaric” made from cherry tomatoes.

Fabulous pancake salad PENEK. You will have to tinker a little with the salad, but the delight of your guests is guaranteed)

Preparations for my sister's anniversary! Insanely delicious, but you can judge the beauty :-) Our family really enjoyed it!

The process is labor-intensive, but the result is worth it!
Who is not afraid of difficulties? We are preparing food!
For pancakes:
flour - 1 cup
milk - 250 ml (I used a little more)
eggs - 2 pieces
ground paprika - 2 tsp.
medium onion - 1 piece
greens (I have dill)
salt (I put a quarter teaspoon)

For the salad:
boiled potatoes - 3-4 medium-sized tubers
boiled carrots (I fried raw) - 2-3 pieces
boiled eggs - 5 pieces
pickled honey mushrooms - I have a 300 ml jar
fresh champignons - 150 g (you can do without them, but I added them and didn’t regret it at all!)
ham - 200-300 g
mayonnaise
greens - dill, parsley
For registration:
soft processed cheese - about 400 g (I have 2 jars of 180 g each)
pickled honey mushrooms
greens - dill, parsley, green onions

Let's start kneading the pancake dough. Mix eggs, salt, paprika and finely chopped onion.

Add chopped dill, flour and milk. I must say that I also added soda at the tip of a teaspoon. Mix well.

The dough seemed a little thick to me, so I added a little more milk and a little vegetable oil. I baked pancakes in a dry frying pan. They turned over perfectly! (I was a little worried - I’ve never baked pancakes with onions :-) But in vain! The dough turned out to be very manageable) I got 9 pancakes.

And we continue the process :-) Eggs grated + mayonnaise, mix

Grind the potatoes + mayonnaise and mix. Diced ham + mayonnaise, mix. Cut the champignons and fry them

and mix with chopped honey mushrooms and herbs

Don't forget to leave a few honey mushrooms to decorate the "hemp"!!! Let's choose the most beautiful ones!

Fry the carrots

Now the fun part :-) Let's start forming our “stump”!
We put cling film on the table or cut a couple of bags (that’s exactly what I did).
We begin to overlap the pancakes, having previously greased them with melted cheese. I ended up with a trail of six pancakes. trim the bottom edge of the pancakes.

Now let's add the filling. Don't try to post it all! Mix the rest, it will be useful for forming “roots”
I got this rainbow :-)

You can roll the salad into a roll. We help with film. We crush it a little, but don’t overdo it! I can say that the roll rolls up quite easily. Make sure that the lower, cut edge curls evenly.

Many thanks to Tanyusha Kalinichenko for the tip. I saw an interesting recipe in her diary and decided to see what it looked like “in real life.” And here’s the result: two completely different recipes for a wonderful and tasty salad. So..

Salad "Mushroom stump" No. 1

Ingredients
-4 carrots (boil)
-3 potatoes (boil)
-3 green apples (sour)
-4 hard-boiled eggs
-150g boiled mushrooms (I used champignons in their own juice)
-300g boiled chicken fillet
-10 walnuts
- mayonnaise to taste

- lettuce leaves and olives (optional for decoration)
Preparation:
Peel the carrots, eggs and potatoes and grate them on a coarse grater. Salt the vegetables and eggs to taste.
Cut the chicken fillet into cubes and add salt.
Cut the apple into slices and place in salted water (this will prevent them from darkening).
Chop the nut kernels with a knife.
Place lettuce leaves on a serving plate, install a cooking ring (if you don’t have one, you can use a cut-off tin can or a cut-off liter plastic bottle).
Lay out the salad in layers (their order can be disturbed):

carrot,

mayonnaise,

eggs,

potato,

mayonnaise,

chicken,

apple,

sliced mushrooms

and chopped nuts.

Salad "Mushroom stump" No. 2

Ingredients:

For pancakes:
Milk - 250 ml.
Eggs - 2 pcs.
Flour.
Salt.
Paprika - 1 - 2 tsp.
Onion - 1 medium onion.
Greens (parsley) - to taste.
For the salad:
Boiled potatoes - 2 tubers.
Boiled carrots - 2 -3 pcs.
Eggs - 3 pcs.
Pickled mushrooms (honey mushrooms)
Ham - 200 - 300 gr.
Mayonnaise.
Greens (dill, parsley)
For registration:
Soft processed cheese.
Egg - 2 pcs.
Pickled mushrooms.
Greens (dill, parsley).
Preparation:

First, let's bake the pancakes:
Mix pancake dough from eggs, milk and flour. Add paprika, finely chopped herbs (to taste, they were not added here) and onions. Let's bake. Oil each pancake. The resulting dough makes about 6 pancakes.
Preparing the filling:
- Grate the boiled potatoes on a coarse grater, add chopped dill and mayonnaise;
- Grate the boiled carrots and mix with mayonnaise;
- Finely chop the eggs (or grate them) and also mix them with mayonnaise;
- Finely chop the mushrooms and mix with herbs. You can add a little mayonnaise;
- Cut the ham into cubes or strips. Add mayonnaise.
Let's start forming the "stump":
- We spread cling film or bags along the table. We cut the pancakes in half and place them on the film overlapping (we arrange the pancakes face down and overlap so that the larger ones end up at the end; if you twist the stump from right to left, then the end is to the left)). Coat each pancake with soft cheese;
- Place the filling along the “pancake path” in rows in random order;
- After all the filling has been laid out, we begin to roll everything into a roll (each filling must be pressed more tightly onto the pancake). The easiest way to roll a roll is according to the principle of a sushi mat - carefully pulling and bending the bag;
- Place the resulting “stump” on a plate. We cut off the protruding ends of the pancakes - they will be useful to us for the roots.
Now let's start with the design:
We form “roots” from the remaining filling. We decorate them with leftover pancakes. To prevent joints and “seams” from being visible, coat the surface of the “hemp” with soft cheese. Not much!!! It functions as a fastener. A kind of putty. We decorate the “stump” with mushrooms and herbs. If you wish, you can also make a fly agaric with pomodoro))
Bon appetit!!!

Step-by-step photo recipe for preparing the Stump salad with honey mushrooms, ham and two types of cheese: it’s sooo delicious!

“Penek” salad with honey mushrooms is an original and very tasty dish. Its highlight is its unusual presentation - the dish is decorated in the form of a stump with roots on which small mushrooms have settled. Such a salad, festively decorated on a large platter, will rightfully take pride of place in the very center of the table! You can prepare a stump for both adults and children - it looks quite elegant, cute and fabulous. The dish is especially relevant for the New Year and Christmas holidays, but serving it in honor of March 8 is a great idea!

“Penek” salad, a step-by-step recipe with photos that Anna shared with us, is formed from halves, between which there is a filling consisting of many ingredients: boiled potatoes, carrots, eggs, finely chopped pickled mushrooms, spicy cheese and tender ham. Curly parsley serves as a bright base, imitating grass.

To prepare the “Stump” salad, pickled or boiled honey mushrooms are usually used, since in our forests you can often see exactly this picture: small honey mushrooms tightly cling to stumps covered with moss. If you were unable to buy honey mushrooms, you can plant small champignons, boletus or oyster mushrooms on the stump - whatever is available will work for the salad. As you understand, the filling can be anything. Our step-by-step recipe describes the filling of soft cheese, potatoes, ham and other ingredients.

In addition, I would like to note that the “Stump” or “Stump” salad with honey mushrooms is quite filling, and not the most difficult to prepare, but it will take a lot of time. How to prepare “Penek” salad with honey mushrooms and ham: step-by-step recipe with photos

First of all, let's boil the food to save time.

Wash the vegetables well with a brush, as the root vegetables will be heat treated in their peels.

Place the vegetables in a saucepan, cover with cold water and put on fire. After boiling, cook for about 20 minutes. You can check the readiness of root vegetables by piercing them with a knife.

Place the eggs in another pan, cover with cold water, bring to a boil and cook from the moment of boiling for 10 minutes. Then pour the boiling water away and pour cold tap water into the pan with the eggs.

Preparing pancakes for the “Stump” salad

In fact, you can use any, but we recommend that you bake them exactly our way - with milk with the addition of turmeric.

Pour in warm (not hot!) milk. Mix thoroughly with a whisk.

Add turmeric and salt to taste.

Sift the flour and add to the bowl, stir well with a whisk or mixer - the dough should be free of lumps.

Preparing the Stump Salad Filling

Peel the carrots and potatoes. Grate the carrots on a coarse grater.

Also grate the potato tubers using a grater with large holes.

Peel the eggs and grate them in the same way as vegetables.

Cut the ham into thin strips.

Grate the hard cheese on a coarse grater.

Drain the liquid from the jar of honey mushrooms. Finely chop the mushrooms, leaving 15 pieces for garnishing the dish.

Place potatoes, ham, cheese, eggs, and chopped honey mushrooms in a salad bowl. Add salt and pepper to taste. Season with mayonnaise and mix.

We don't add carrots here.

In a separate container, mix carrots with mayonnaise.

Place the other half on the greased pancake and press. Place in the same way 8 halves in a chain, fastening them with processed cheese. 2 more halves of the last pancake will be used to make the “roots” of the hemp.

p.s. The photo shows the design of only two halves of pancakes.

Place a thin layer of carrots on one edge of the pancake track, as in the photo. Place a thin layer of mushroom filling on the remaining area of the pancakes.
