Black potatoes: composition, beneficial properties, varieties, yield and other features. How to grow purple potatoes in your summer cottage

In Colorado State University, plant breeders set out to create domesticated potatoes with purple-blue flesh by crossing traditional varieties with a wild relative native to South America, specifically the Andean highlands. Scientists in Latin American countries have also been breeding cultivars, for example, the Purple Peruvian variety was developed in Peru. Moreover, in obtaining new potatoes, no genetic modification methods were used - only classical selection.

This is how purple potatoes appeared first on the American continent, and then they reached Europe and Asia.

In Russia, breeders at the Siberian Research Institute of Agriculture also produced tubers with different color intensities, ranging from pink to dark purple. The first successful experiments conducted by Russian scientists gave their results in 2011 in Tomsk, and the source material was obtained in 2007 from South Korea. At the exhibition of the First International Congress “Potatoes. Russia 2007”, held in the city of Korenevo, unusual South Korean tubers were demonstrated.

Today, many varieties of purple potatoes have already been bred, for example, French purple truffle, Negro, Chinese truffle, Vitelotte, Gurman, Russian blue (aka Russian black), etc. They differ in the richness of the color of the pulp, but they have one thing in common - all these varieties much healthier than the usual one we are used to.

Unfortunately, domestic seed material has not yet been created in a volume sufficient for industrial cultivation, but you can already buy an unusual vegetable for your summer cottage at agricultural markets and in online stores.

What's so attractive about purple potatoes?

Well, Firstly, purple-colored potato varieties allow you to create new and interesting dishes, which is highly valued by lovers of exotic cuisine.

Secondly, despite the fact that boiled potatoes (and experts recommend boiling rather than frying these tubers to preserve their nutritional value) are blue in color, their taste is completely no different from traditional white-cream varieties. Therefore, although the dish turns out to be original in appearance, its taste properties do not suffer from this.

But the most important thing that made breeders so interested in purple potatoes is the anthocyanin pigments, which give the tuber pulp this amazing color. Anthocyanins have enormous healing potential, which has been used since ancient times in folk and now traditional medicine. The sources of anthocyanins were blueberries, grapes, pomegranates, blackberries, black currants, mulberries, beets, peppers and other fruits that have a violet-blue, purple and red color.

Anthocyanins are substances of a glycosidic nature, the color of which is determined by the pH of the environment. In an acidic environment they acquire red tints, in an alkaline environment - yellow-green, in a neutral environment - purple. Therefore, people who introduce purple potatoes into their diet should not be surprised if suddenly, when adding citric acid or vinegar, the vegetable changes its color. At the same time, heat treatment does not destroy these substances, so the tubers can be boiled, fried, stewed, or steamed.

Purple potatoes are indicated for people suffering from the following diseases:

  • diabetic reticulopathy;
  • hypertension;
  • cardiovascular pathologies (atherosclerosis);
  • poisoning;
  • reduced immunity;
  • inflammatory diseases of bacterial and viral etiology.

Antioxidants in purple potatoes can slow down the aging process, destroy free radicals that cause cancer, and strengthen the walls of blood vessels.

In addition to antioxidants, these unusually colored tubers contain a large amount of vitamin C. According to some data, its content is only half that of a lemon, that is, two tubers can replace one fruit of this citrus fruit. However, unlike lemon, purple potatoes do not contain essential oils, which often cause allergies.

In addition, scientific research has proven that purple potatoes reduce blood pressure due to the increased content of chlorogenic acid and participate in the regulation of hormonal balance (affecting the production of estrogens - female sex hormones). Carotenoids (which include provitamin A) were also found in the pulp of this vegetable. And what’s most surprising is that, despite the high starch content, amethyst-colored potatoes do not increase the risk of obesity. The latter is explained by the high metabolic activity of other substances that make up blue-violet potatoes.

Soil preparation, planting and care

A prerequisite for proper development of tubers and high yields is proper care. The place for planting purple potatoes must be chosen in such a way that the planting is well lit, preferably the southern or southwestern section of the plot.

The soil should be light enough to provide easy access of oxygen to the roots and not allow water to stagnate, but it should not be allowed to retain moisture at all. Thus, neutral sandy loam, soddy-podzolic, light loamy and floodplain soils are best suited for growing this type of potato. For good rooting and proper development of tubers, you need to dig deep into the place where you plan to plant the plants.

It is better to carry out rough initial digging before frost, when it is already quite cold.

Due to the fact that large clods of earth turned out with a shovel will be on the surface, the pest larvae in them will die with the onset of cold weather.

If the clods are crushed, then it will be easier for insects to burrow into the depths and overwinter under a fluffy layer of soil, like under a blanket. Also at the same time, it is advisable to apply fertilizers per 1 m2 - 30 g of superphosphate and 15 g of potassium salt. It is possible and even necessary to add humus (half a kilogram per 1 m2), which will provide the growing tubers with valuable microelements.

In the spring, when the ground warms up by at least 5°C, it will be possible to plant. At this time, repeated digging is done, but with the soil loosened, holes are dug, and wood ash is poured into the bottom. The latter is not only a source of minerals, but also a good antiseptic that prevents the development of bacterial diseases. The holes must be at a distance of at least 30 cm from each other in the same row, and a gap of 60 cm wide must be left between the rows. If the soil is heavy, then the soil with which the tubers will be filled must be mixed with sand. The depth of the holes is approximately 10 cm.

If you want to get the harvest earlier, you can plant already sprouted purple potato tubers. To do this, they are left in a lighted room at a temperature of about 14-18 ° C above zero, about three weeks before planting. After the potatoes are planted, it is better to cover them with film, which is removed when the sprouts are already about 10-13 cm tall.

Dry soil is watered abundantly several times:

  • after the plants have sprouted;
  • after tying the buds;
  • after the flowers fall.

It is advisable to irrigate the plantings once a week, provided there is no rain. If a crust forms on the surface of the soil, it must be loosened. Excessive soil moisture can lead to putrefactive diseases. At the same time, lack of moisture leads to dehydration and drying out of purple potatoes.

Do not forget to weed the beds with plants and treat them with preparations against late blight, Colorado potato beetles and other pests and diseases.

By the way, our breeders tried to develop varieties that are resistant to many types of potato diseases. Therefore, before purchasing, try to read the recommendations of professionals, and then this valuable and tasty vegetable will give you all its healing potential.

Video review of purple potato varieties

Today, purple potatoes are gaining immense popularity. Dishes made from this product have long delighted gourmets in the best restaurants in Paris. Various diets have been created based on it, and in the USA there are factories for the production of colored chips. Korea produces cosmetics with anti-aging effects. Now this miracle is available to Russian consumers.

Description

Purple potatoes were brought from Peru and have not only the appropriate skin, but also pulp, and the difference can only be seen in the tones. The product does not lose its color even after cooking. This color is given to the variety by the anthocyanins included in its composition, which have a high antioxidant effect, perfectly normalize metabolic processes and stop aging.

The main differences between the vegetable and the usual potato are the following characteristics:

1. The tubers have an oblong shape, the flesh is purple, and the skin is the same color, but darker. Even after cooking or frying it does not lose its color.
2. Due to the beneficial properties of the vegetable, it can be used in folk medicine to prevent stroke and lower blood pressure. Such indicators are due to the presence of anthocyanins, starch, carotenoids, potassium, phenolic acids and calcium.
3. Purple potato varieties have thick skins, allowing them to be stored for a long time. The scope of use is quite wide: it is boiled, baked, fried, and also used as a component for stews, salads and casseroles.

Beneficial features

Despite the high calorie content of the product, it has many positive characteristics:

  • the variety contains a lot of starch and insulin, which is very necessary for diabetics;
  • you can reduce the calorie content of the product if you do not use frying or fats to prepare it;
  • Thanks to the composition of vitamins, it perfectly improves immunity.

Contraindications

People suffering from low blood pressure should not eat purple potato varieties. Also, gourmets with individual intolerance to certain components should refuse the sample. You also need to monitor the amount that is consumed, since you should not overdo it.

Use in cooking

Since the vegetable contains a lot of starch, it is ideal for making purees. In this case, the dish turns out to be not just tasty, but very unusual, with a characteristic touch that young children like so much. In order to preserve all the beneficial properties of purple potatoes, they are baked with different spices, and cooks also fry and boil them in pieces. It is very popular to use the root vegetable to decorate various salads.

Description of varieties

Today, colored potatoes are very popular and in demand.

American varieties:

  • All blue.
  • Red thumb.
  • All red.
  • Bresee.
  • Adirondack blue.
  • Red thumb.
  • Purple peruvian.
  • Adirondack red.
  • Purple majesty.

European varieties:

  • Blue Salad Potato.
  • Blaue Schweden.
  • Highland Burgundy Red.
  • Hermanns Blaue.
  • Vitelotte.
  • Shetland Black.

The most delicious and widespread potato in Russia is the Vitelotte potato, as it contains the largest amount of antioxidants. But there is also a disadvantage of this type, namely, unsightly, for many, ugly tubers, which repels potential consumers.

In the conditions of our country, it is very difficult to obtain excellent harvests of American, and with rare exceptions, European species, since they are destroyed by late blight viruses.
The most popular purple potato is the Violet variety. It is famous for its high content of flavonoids and antioxidants and is recommended for consumption by patients suffering from diabetes. It is not an early vegetable, and its starch content does not exceed 12-13%. It has oval tubers that grow no more than 70 grams with a bright purple color of the pulp and peel. Lightness and taste are characterized by breeders as excellent.

Purple potatoes, a photo of which can be seen below, are quite productive and reach up to 250 kilograms per hundred square meters.

The “Lilac” variety is the very first potato that was bred by Russian breeders and went on sale back in 2009. Purple is the final and improved type of “Lilac” and is already registered in the State Register.

The Gourmet variety is also very popular. It is considered less caloric and, in turn, more healthy. The tubers can be prepared and consumed in many ways, as well as raw. An additional advantage of this potato is that during cooking it does not boil over and does not lose its shape.

Russian breeders have developed the following varieties of potatoes:

  • “Black Prince” - large tubers of dark purple, sometimes burgundy color;
  • “Blue Danube” - blooms with beautiful blue flowers; before planting, it is recommended to treat the tubers, since this particular type of potato is loved by bacteria, which later cause fungal diseases;
  • “Meteor” is a high-yielding and early species;
  • “Ermak” is a clone of the American variety Bresee, this is the most popular species in this state, it takes root well in Russia and shows good yield.

Landing

Initially, you need to purchase high-quality seeds and germinate them. You need to prepare for the fact that not all root vegetables will sprout, this often happens. They germinate at the end of April, and are transferred to open ground only in May. The description of the purple potato variety says that caring for it is the same as for regular potatoes. It is necessary to carry out hilling regularly and lay lawn grass or pre-weeded weeds between the bushes. It is recommended to choose vermicompost as a top dressing. For seedlings, you need to buy only high-quality soil and monitor watering, as mold may form and you will have to treat the seedlings with special preparations.

Further care

Gardeners who are interested in growing purple potatoes should be advised to carefully consider the choice of seed material. You can plant such a plant with tubers, but it is much easier to plant it with seeds. To do this, you will have to germinate them and prepare seedlings, which are then sent to open ground.

There are no particular problems when growing this variety. The gardener needs to constantly water and properly hill the plant. After each rain or watering, you need to loosen the surface layer of soil in order to cope with the dense crust, which significantly impairs the breathing of the root system.

Harvesting most often takes place in September, sometimes even in October, it all depends on the variety. The harvested crop retains its taste for a long time. It should be noted that the vegetable grower can independently prepare seed for the next year, for which it is recommended to choose medium-sized tubers.

Where is it grown?

Purple potatoes have become very popular lately. It is often grown in Scotland, Canada, South Korea and the USA. Moreover, tubers in these countries can be easily found on store shelves. In Russia, breeding of such varieties has been practiced in Tomsk since 2011.

In 2007, one of the employees of the Siberian Research Institute (Research Institute) of Agriculture received unusual tubers from South Korean breeders, who were invited to an exhibition where they presented this amazing variety.

Then development began, and the presented copy was adapted to our climatic conditions in the Urals. Since colored potatoes are becoming increasingly popular, today they can be seen in private gardens. Many gardeners have become very interested in this vegetable because of the beneficial properties that are unique to it.

There are many varieties. Each of them has an original color of pulp and peel. South America is considered the birthplace of exotics, but today you can find tubers in many Asian and Western countries, as well as in Russia. The most difficult thing in growing this miracle is the formation of seedlings, otherwise they are unpretentious in care and perfectly adapted to domestic climatic conditions.

Here are some more photos of the Gypsy potatoes:

Origin

“Gypsy” is a variety of folk selection, the prototype for which was the famous Dutch hybrids Black Baron and. The variety is not included in the State Register; potatoes are widespread. Not suitable for industrial cultivation, as it suffers greatly during mechanical cleaning. It is most often planted on small farms, as well as in private plots.

It is preferable to grow Gypsy potatoes in regions with a temperate or continental climate.

Advantages and disadvantages

The main advantages of the variety include:

  • high taste qualities of tubers;
  • early maturation;
  • good yield;
  • unusual blue-violet shade of the peel;
  • resistance to major diseases.

The variety has practically no disadvantages. A feature can be considered demanding soil nutrition and moderate moisture.

One more problem - peel too thin, which makes it easier to cut tubers, but eliminates the use of a combine when harvesting.

Features of cultivation

Can be used to control weeds.

A week before the start of harvesting, it is recommended to cut off all the tops; this will allow the tubers to gain weight and also accumulate useful substances. Potatoes should not be allowed to lie in the ground. It's better to remove it a little earlier. This approach will help avoid diseases (for example,).

Diseases and pests

The “Gypsy” variety is insensitive to many dangerous diseases: potato, common, and various viruses. Quite resistant to, rarely affected by gray rot. For prevention, it is necessary to soak the tubers with disinfectant solutions before planting.

It is advisable to change the planting site once every 2-3 years, this will prevent unpleasant diseases and strengthen the plants’ immunity.

Ideal predecessors for potatoes are phacelia, oilseed radish, or. These crops will saturate the soil with useful microelements and prevent the occurrence of infections typical of nightshades.

Like many blue-skinned varieties, "Gypsy" is often attacked by click beetles. The former spoil the tops, the larvae of the latter () attack the tubers, making tunnels in them and reducing the commercial quality of the root crops.

Pre-planting tillage of the soil and bushes will help get rid of pests. Possible use non-toxic biological products, they are especially needed during the formation of tubers. It is often recommended to use it to obtain a better harvest.

“Gypsy” is an interesting and promising variety that is best grown on farms or in private plots.

With proper care, the tubers will turn out very beautiful, they will be stored for a long time. not subject to degeneration, it can be collected from year to year on your own site.

Potatoes are a simple, everyday food for many people, and they are difficult to surprise. The variety of varieties is great, but they differ from each other mainly in growth qualities and adaptability.

Variety of varieties

Conventionally, all potatoes can be divided according to the color of the peel or the color of the pulp. There are white, yellow, pink, red and lilac potatoes. Also, the eyes may differ in color from the peel and be pink or lilac. Potato flesh is usually yellow or white. But there is also a rather unusual one with purple flesh.

It is found only on the shelves of exotic stores, although in Europe it can also be found in markets. Celebrity chef Jamie Oliver often uses this potato variety in his dishes. In England there is a real boom in the use of this amazing root vegetable.

The healthiest potato. Variety

Purple potatoes attract with their unusualness. What is its composition - like white or are there any special features? The answer is simple. There are useful substances in them. Potatoes, blueberries, blackberries, dark grapes, eggplant, basil and many other plants are due to anthocyanins. It is not for nothing that people have noticed their beneficial properties since ancient times. Everyone can eat purple potatoes. These substances have no contraindications.

An unusual vegetable can reduce blood pressure. However, purple does not promote weight loss. A group of 18 volunteers with high blood pressure and overweight has already been studied. By eating 6-8 potatoes a day, the test subjects reduced their average blood pressure reading by about 4%.

Origin

Potatoes with purple flesh were selectively bred. Scientists from the University of Colorado set this goal while trying to zone and domesticate wild potatoes from the Andean highlands. Other names were previously known: “negress”, “vitalot”, “Chinese truffle” and “truffle potato”. The “purple French truffle potato” variety has long been prepared in the best restaurants in Paris. This speaks, first of all, about the good taste of potatoes with bluish flesh. So the origin of the miracle potato is absolutely legal, and it does not contain any foreign genes. Indian tribes in the Chilean Andes are distinguished by their extraordinary health and longevity. From this we can conclude about the beneficial properties of such an unusual plant.

Potatoes are purple. Description of the variety

The purple potatoes themselves are not large. Its dimensions and weight are about 70 grams. The color of the pulp is due to a large amount of anthocyanins - substances that block the properties of these unusual substances, contained in many purple vegetables and fruits, have long been confirmed by science.

Anthocyanins help slow down the aging of the body, they fight a wide variety of diseases and help prevent cancer. Both the pulp and the peel have great benefits, so purple potatoes are cooked in the oven without peeling. After heat treatment, the pulp retains its color, and therefore all its benefits. The calorie content of such potatoes is only 110 kcal per hundred grams of product. The product is quite crumbly.

Distribution in Russia

Purple potatoes quickly conquered Scotland and adapted perfectly to its soils. Soon it will appear here in Russia too. In Tomsk, scientific developments are already underway to adapt the variety to Siberian soil. There are already first successes.

By consuming such potatoes daily instead of regular ones, you will be able to improve your well-being and do without many medications and cosmetic procedures. Besides, it is very tasty. For now, you can safely order purple potato seeds. Just keep in mind that tubers will appear only in the second year. At first you will only get a handful of seed potatoes. It is extremely important to take care of the preparation of planting material, to prevent it from becoming infected with diseases, and to protect it from pests.

Eating

Jamie Oliver advises preparing cold salads and snacks from unusual potatoes. Radishes, herbs, tomatoes and peppers, and asparagus go well with this miracle vegetable. The experimental cook even adds peeled grapefruit to his potato dishes. It is best to season this unusual salad with olive oil. This will not affect your figure in any way.

Not long ago, an exotic vegetable appeared on store shelves - purple potatoes. At first, consumers were wary of it, but when the beneficial properties became known, the situation immediately changed. In addition, the exotic color of the pulp allows chefs to create culinary masterpieces that have an original appearance. True, this type of potato is not yet grown on an industrial scale in our country, but for your own summer cottage you can easily order seed from an online store.

A characteristic feature of this potato is not only the exotic color of the skin, but also the pulp. The shades range from soft pink to dark purple. This unusual plant was obtained without the use of genetic modification methods: specialists used exclusively classical selection methods. They crossed the familiar potato with its wild relative from South America.

Purple potato varieties include those that have an intense color not only of the peel, but also of the pulp.

General differences between purple-fleshed varieties include the following:

  • the tubers have an oblong shape;
  • the pulp does not lose its color even after heat treatment;
  • there are a large number of useful microelements that help improve immunity;
  • Keeps very well due to the thick skin.

After cooking, the pulp has a characteristic nutty flavor, which also makes these varieties stand out and expands the possibilities of use in cooking.

Breeders have become seriously interested in breeding varieties with purple flesh, so now there are quite a lot of them. But domestic gardeners very often call this variety much simpler: blue potatoes. However, this does not change the essence.

Potatoes with purple flesh are still at the stage of breeding development, but now you can purchase some varieties with different color intensities for your summer cottage. The most popular include:

  • French purple truffle;
  • Black woman;
  • Chinese truffle;
  • Witelotte;
  • Gourmet;
  • Russian black.
Black woman Chinese truffle Potatoes French purple truffle Vitelotte Russian black Gourmet

There is no talk yet about volumes sufficient for industrial cultivation, but stores are happy to present to their customers the indicated varieties for growing in garden beds.

Purple potatoes deserve attention not only due to their unusual appearance and bright color. It has a lot of useful and healing properties. For example, if you prepare a dish from it in any way, you can easily reduce blood pressure in the human body. At the same time, this potato can be harmful to people suffering from low blood pressure and should be avoided in the menu of colored potato dishes.

In addition to antioxidants, the unusually colored purple tubers contain large amounts of vitamin C.

Thanks to the presence of antioxidants, purple potatoes can slow down the aging process. It contains a large amount of vitamins C, E and carotenoids. The product is not genetically modified, and its unusual color is the result of crossing with wild African and equatorial varieties.

Regular consumption of colored potatoes improves vision and strengthens the walls of blood vessels. This reduces the risk of atherosclerosis. It also reduces the risk of developing certain types of cancer.

In practice, the same dishes are prepared from purple potatoes as from white or cream ones. At the same time, they differ in their original appearance.

Fried purple potatoes

Tasters note that they have a characteristic nutty flavor, but this does not spoil the impression of the dish.

Colored potatoes are used in dietary nutrition because they not only contain a huge amount of vitamins and microelements, but also, with a high level of starch content, do not lead to obesity. This is achieved through the metabolic activity of other substances.

Planting is carried out in two ways: traditional (tubers) and seeds. For the second option, you first need to germinate the seeds, then grow seedlings at home, and then transplant them into open ground. Seeds are planted in April, and seedlings are transplanted into open ground no earlier than in mid-May.

Properly germinated planting material of purple potatoes will ensure fast, uniform germination and early setting of tubers

When planting tubers, the planting period is the same as for regular potatoes.

When choosing planting dates, the climatic and weather characteristics of the region are taken into account. You should definitely wait until the threat of night frosts has passed.

They try to choose light soil for planting purple potatoes. Oxygen should easily penetrate into it and excess moisture should not stagnate. An excellent option would be neutral sandy loam, as well as floodplain and soddy-podzolic soils. Before the onset of the first frost, a rough initial digging of the selected area is carried out. During frosts, the pest larvae that were in the turned-out soil will die.

The area for colored potatoes should be dug up in the fall with the addition of potassium fertilizers and superphosphate

With the onset of warmth, when the minimum soil temperature reaches 5°C, planting begins. First, the soil is dug up again and holes are prepared with the addition of wood ash. The distance between rows should be at least half a meter, and between holes it should be maintained at 30 centimeters. The planting depth reaches 10 centimeters.

Planting and care

If the soil in the selected area is dry, then watering should be carried out at least three times: immediately after emergence, during flowering and immediately after it. In conditions where there is no rain, plants need to be irrigated at least once a week. If there is a lot of moisture, fungal diseases will develop, and if there is not enough moisture, the plantings may dry out.

During planting, care should be taken to ensure that the plants have good access to air and light. To do this, you should not save space and plant bushes very close to each other, but maintain the recommended distances.

After purple potatoes sprout, they need to be regularly weeded and weeds removed. When a crust appears on the soil, you should loosen it. The beds are regularly treated with preparations against the Colorado potato beetle, late blight and other common pests and diseases.

Loosening the soil and hilling potato beds

For now, purple potatoes are classified as delicacies. But thanks to the hard work of domestic breeders, it is quite possible that it will soon become available to any category of the population, as it brings benefits to the human body. This would be wonderful, since the beneficial properties of this product make us seriously think about the industrial scale of growing colored potatoes in our country.
